Sunflower Cashew Cheesy Sauce

Instructions

  • Blend all the above ingredients with 1 1⁄2 cups of the water until creamy. Add the rest of the water and mix well.
  • You may freeze the cheese at this point in smaller portions if you wish, and only cook up the cheese as needed. I suggest using 1 or 2 cup portions. You can freeze in a ziplok bag or glass jars, just be careful not to overfill jars.
  • When ready to use, bring liquid to a boil, stirring continuously until it thick- ens. May use hot or chilled.

Serving suggestions:
Dip – with crackers or toasted corn tortilla chips On bread as a spread.
On vegetables as a cheese sauce
With whole-grain pasta, like macaroni and cheese.
