Lucia’s Mashed Potatoes

Ingredients

  • 5 lb. Yukon Gold peeled, cubed, rinsed
  • 2.5 lb. Red potatoes peeled, cubed, rinsed
  • 1 Large onion, quartered.
  • 1 cup soymilk
  • ΒΌ cup vegan butter

Instructions

  • Place onion in water to boil with potatoes. Add some salt if desired.
  • Drain, reserve some water. Mash with water or soymilk (original flavor) and Smart Balance lite to taste. Salt to taste. Nice with a sprinkle of vegetable seasoned salt.
