Lucia’s Tofu Super Scramble

Ingredients
- 1 onion whole julienned
- 2 garlic cloves crushed
- ½ cup mushrooms canned
- 1 pound tofu extra firm, crumbled
- 1 Tbs. Chick it Seasoning or to taste
- 2 Tbs. Nutritional yeast flakes
- ½ tsp Turmeric
Instructions
- Sauté onion, garlic and mushrooms until lightly browned (in a dry, non-stick fry pan with a little vegetable broth as needed to prevent burning)
- Stir together in a medium mixing bowl: tofu, seasoning, nutritional yeast flakes and tumeric
- Add tofu mixture to pan and stir. Lower heat to medium low and cook until tofu begins to brown a little.
- Stir occasionally to keep from sticking. Cover and simmer on low for 10 minutes.
- Garnish with fresh parsley if desired.
Notes
Variation: Add 1⁄2 cup of diced tomatoes (fresh or canned), 2 Tbs. chopped cilantro, and 1⁄2 cup whole kernel corn for a Huevos Rancheros style scramble. May use either
version wrapped in a tortilla, Butter lettuce or red leaf lettuce wrap, or Garbanzo Crepe or as Breakfast Burritos.
