Ingredients

  • 1 Onion medium
  • 4 garlic cloves
  • 2 tsp. salt
  • 4 c. water
  • 4 c. tomatoes canned
  • 1 cup lentils – brown or red 8oz can
  • 3 carrots medium, diced.
  • 3 potatoes 1/2 inch cubes
  • 2 bay leaves
  • 2 tsp. dry oregano leaves
  • 1 T. dry basil

Instructions

  • Dry-pan sauté onion, garlic, and a bit of the salt.
  • Add all other ingredients in the order listed.
  • Simmer together until lentils fall apart
  • 30-60 minutes on the stovetop, 16 minutes in the Instant Pot.
  • May use fast or slow de-pressurizing in the Instant Pot.
