Lucia’s Tasty Lentil Soup

Ingredients
- 1 Onion medium
- 4 garlic cloves
- 2 tsp. salt
- 4 c. water
- 4 c. tomatoes canned
- 1 cup lentils – brown or red 8oz can
- 3 carrots medium, diced.
- 3 potatoes 1/2 inch cubes
- 2 bay leaves
- 2 tsp. dry oregano leaves
- 1 T. dry basil
Instructions
- Dry-pan sauté onion, garlic, and a bit of the salt.
- Add all other ingredients in the order listed.
- Simmer together until lentils fall apart
- 30-60 minutes on the stovetop, 16 minutes in the Instant Pot.
- May use fast or slow de-pressurizing in the Instant Pot.
