Lucia’s Almond Rice Casserole

  • ½ cup garbanzos soaked
  • ½ cup water
  • 1 cup bread crumbs dry whole grain or 1 cup cooked brown rice
  • 1 onion chopped
  • ½ cup hot water
  • ½ cup almonds chopped
  • ½ cup celery chopped
  • ½ cup sunflower seeds
  • 1 tsp. Marjoram
  • 1 tsp. Thyme
  • ½ tsp. Salt


  • Process beans and water in a blender until smooth.
  • Combine all ingredients, and mix well.
  • Let stand for 5 minutes.
  • Press into a sprayed loaf pan.
  • Bake at 350 degrees for 45-60 minutes.
  • May also be baked in a bundt pan.


Release from pan onto serving dish and pour Cashew White Sauce over the top just before serving.
Freezes and slices well. For variation, slice and use as a sandwich filling.
