Lucia’s Basic Soy Mayonnaise

  • ¼ cup lemon juice
  • 1 cup cold water
  • ½ cup Soy Milk powder NOW brand unflavored
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ cup oil


  • Put the lemon juice into a large bowl and set aside. Blend all the ingredients except oil.
  • Drizzle the oil slowly into the blender on high speed Blend until thickened.
  • Pour into the container with the lemon juice and fold in the lemon juice till thoroughly mixed.
  • Chill.


Yields: 2 c. mayonnaise
