Tomato Basil Soy Curls over Legume Pasta
Ingredients
- 2 cups Soy curls dry
- 2 cup Water warm
- 2.5 Tbs. Lucia’s Chicken style seasoning see below
- 8 oz. package of red lentil chickpea, or other legume pasta
- ½ Large Onion quartered and sliced thinly
- 2 cloves garlic crushed
- 1 tsp. Italian Seasoning
- ⅓ cup Tomato Paste
- 1 tsp. Honey
- 1 tsp. Bragg’s Aminos
- 14 oz. Diced tomatoes 1 can
- ½ cup Basil fresh chopped
Instructions
- Mix the soy curls, hot water, and seasoning and set aside to rehydrate.
- Prepare an 8 oz. package of red lentil, chickpea, or other legume pasta according to package directions. Rinse and drain and set aside.
- Dry sauté the onions and garlic over medium high heat, using just enough water to keep them from scorching, until soft and clear.
- Add the Italian seasoning and stir.
- Add the tomato paste and stir to mix well.
- Add canned diced tomatoes and the rest of the seasonings.
- Adjust salt and seasonings to taste if desired.
- Stir in the chopped basil just before removing from heat.
- Serve over the hot pasta.
