Ingredients

  • 2 cups olives pitted, drained (black mixed with some green pimento stuffed or kalamata are good)
  • 2 garlic cloves crushed
  • â…“ cup sun-dried tomatoes nothing added
  • ½ cup basil fresh, packed
  • 1 Tbsp olive oil optional
  • 3 Tbsp lemon juice approx. 1 lemon

Instructions

  • Place all ingredients in a food processor and chop until it’s a spread consistency with some texture. Sides can be scraped down if needed.
  • Taste and adjust seasoning. Add a pinch of salt if needed (will depend on types and amounts of olives). Feel free to experiment with more tomatoes, basil, lemon juice, or garlic, depending on which flavor you want to emphasize.
  • May be used immediately or chilled and stored in refrigerator for a week or so.
  • Makes a great dip, or sandwich spread.

Notes

*If using sun-dried tomatoes packed in oil, start with a smaller amount and omit olive oil from recipe.
