Lucia’s Quick Garbanzos and Dumplings

Ingredients

Broth:

  • 4 c. Water
  • ¾ tsp. Celery salt
  • 1 Tbs. Vegetarian chicken seasoning
  • ¼ tsp. Garlic salt
  • 1 Onion finely chopped finely chopped. (or 3 T. dry minced onion)
  • 2 Tbs Nutritional yeast flakes
  • 2 cup garbanzos Precooked. (1 regular size can with broth)
  • 1 cup 100% whole grain or legume bowtie pasta

Dumplings:

  • 1 cup Whole white wheat flour (1/2 can be unbleached white, if you wish)
  • 1 tsp. salt
  • ¼ cup Water Cold. Use little more if using all whole wheat
  • 3 Tbs Olive Oil Light

Instructions

  • Bring broth to a rolling boil.
  • Add precooked garbanzos.
  • Add pasta OR the homemade dumplings
  • Simmer for 45 min. More water may be added as desired.

Dumplings

  • Whip water and oil together. Pour over dry ingredients, mixing lightly with fork.
  • Form into a ball and roll out to 1/4" thick or less. Cut into 1"x2" strips and drop into boiling broth.
