Lucia’s Simple Humuus

Ingredients

  • 15 oz garbanzos 1 can, drained, but set liquid aside for use below (organic preferred)

OR

  • 2 cups cooked garbanzos plus liquid
  • ¼ cup lemon juice
  • cup tahini sesame seed butter – often in middle eastern section of grocery
  • 2 cloves fresh garlic
  • 1 tsp. salt
  • ½ cup liquid from canned garbanzos.

Instructions

  • Place all ingredients in blender.
  • Blend at high speed until smooth.
  • Serve chilled.
  • Keeps in refrigerator for up to a week. Can be frozen.

Notes

Use as vegetable dip for carrots/celery or other veggies.
Can be used as spread on crackers in place of cheese.
Variations:
-Add 1⁄2 cup of roasted red bell pepper.
-Thin with a little more garbanzo bean juice and use as a dressing on salad.
