Lucia’s Creamy Topping

This whole-food topping is delicious on top of hot, whole grain cereal like oatmeal, millet, quinoa, and others. Try it over fruit salad or fruit crisp as well!
Lucia’s Creamy Topping
Servings 3 cups
Equipment
- Blender
- Measuring cup and spoons
Ingredients
- ½ cup Cashews raw, rinsed
- ½ cup Pecans, almonds, or brazil nuts
- 8 whole pitted dates deglet noor ( or 4 medjool dates)
- 1 cup canned, crushed pineapple
- 1 tsp vanilla extract
- 1 cup non-dairy milk vanilla flavor
Instructions
- Blend well, adding milk as needed to keep everything moving.
- Continue to blend on hi speed until everything is smooth.
- Use immediately. Store any leftovers in refrigerator for up to 5 days.
