Lucia’s Cheezy Topping

This creamy cheese sauce is easy to make with only a few ingredients. It’s rich flavor is delicious over almost any dish. I like to drizzle it over potatoes, vegetables, burritos or pasta. Trust me, once you taste this silky sauce, you’ll be questioning why you haven’t made it sooner!
Lucia’s Cheezy Topping

Ingredients
- 1 Cup Water warm
- 1 Cup Cashews raw rinsed
- 1 Tsp Onion granulated
- ⅛ Tsp Garlic granulated
- 1 Tsp Salt
- 3 Tbs Nutritional yeast flakes
- 1/4-1/3 Cup Lemon juice according to tartness desired.
Instructions
- Whiz all ingredients in blender until very smooth.
- If using VitaMix, may blend for 6-8 minutes until sauce has cooked and thickened but still pourable. If not using VitaMix, go to next step.
- Pour into small saucepan over medium high heat and stir constantly until it boils. Allow to boil for about 30 seconds. Will thicken with cooking.
- Variations: May add ½ c. of roasted, canned pimentos (or 1/4 large red sweet bell pepper) for a sweeter, orange colored cheese.
