This makes an excellent and delicious sandwich spread that is low calorie and low fat. Even if you do not like standard mayo, you should try it – I think it is much better! Feel free to leave any comments on that below! The tofu does make it more of a yellow light food, as it is not a whole food.
Lucia’s Tofu Mayo
- Place all ingredients in blender and blend until smooth.
- May serve immediately or chill and serve.
- Keeps in refrigerator for about a week.
