Lucia’s Tofu Mayo

This makes an excellent and delicious sandwich spread that is low calorie and low fat. Even if you do not like standard mayo, you should try it – I think it is much better! Feel free to leave any comments on that below! The tofu does make it more of a yellow light food, as it is not a whole food.

Ingredients

  • 1 12 oz Tofu Mori Nu
  • ½ cup cashews raw and rinsed
  • 1 tsp. onion dry granulated
  • ½ tsp. garlic dry granulated
  • ¼ cup lemon juice
  • 1 tsp. salt

Instructions

  • Place all ingredients in blender and blend until smooth.
  • May serve immediately or chill and serve.
  • Keeps in refrigerator for about a week.
