Lucia’s Quick Ketchup

Ketchup is such a great flavor addition to a lot of sandwiches, burgers, loaves, and of course potatoes! Commercial ketchup tends to be a real land mine full of sugar, vinegar, oil, and additives. This flavorful version skips all the negatives and gives you a nice tomato-ey addition to all your favorite foods. You can add 2 Tbs. of extra virgin olive oil and 1 Tbs. more of honey to the recipe if you are in transition to a whole food dietary plan and need to make it a little more gradual. I thought it was fine without the oil and extra honey, but I know picky kids that can’t tell it’s not commercial when it has the oil and extra honey — so just a tip of you are needing to transition a little more gradually.
