Lucia’s Oil Sub for Dressings

An oil free base for clear, vinagrette-style salad dressings that has a great mouthfeel and sticks to your greens!

Ingredients

  • 1 Tbs. arrowroot powder
  • 1 cup cold water

Instructions

  • Pour most of the water into a small saucepan, reserving about ΒΌ cup of water in the measuring cup.
  • Add arrowroot to reserved water and mix well until completely dissolved.
  • Bring water to a boil.
  • Add arrowroot mixture while stirring quickly and keep stirring for 1 minute until solution is clear.
  • Chill and use in a 1:1 substitution for oil in cold dressing recipes.
