Lucia’s Baked Beans

What’s a summer picnic without baked beans?! A dud, right? Well here is a great recipe for those take-along-beans and it avoids the sugar and other processed ingredients found in commercial beans and even many homemade recipes.

Tasty, no-sugar version of the popular boston baked beans

- Instant Pot
- 9×13 Casserole dish
Ingredients
- 2 ½ cups dry Navy beans cooked (may crockpot overnight and also use great northerns, or cannelloni beans), 1 pound of dry beans or 9 cups of cooked beans
- 1 med Onion chopped
- 2 cloves garlic minced or crushed
- 1 ½ c. tomato puree
- ½ c. date sugar or pitted dates blended with tomato puree
- ⅓ c. date syrup (or molasses)
- 1 tsp. onion powder
- 1 T. lemon juice
- 1 Tbs. vegetable salt
- 2 tsp. Bakon yeast
- ½ tsp. salt or to taste
- 2 Tbs. Braggs Aminos
Instructions
- Cook beans until tender.
- Add all other ingredients and bake in a 9” x 13” casserole dish at 350° for 1 hour until golden brown and bubbly.
- Tastes even better the next day.

Serving Suggestions:
• Try them over toast for a great entrée.
