Lucia’s Pizza Sauce

Ingredients

  • 1 onion chopped
  • 4 oz mushrooms (optional) 1 can
  • 2 cloves garlic crushed
  • 1 Tbs. Italian seasoning
  • 1 tsp. basil dried
  • 6 oz tomato paste 1 small can
  • 14 oz tomatoes, diced 1 can
  • 1 Tbs. date sugar or honey
  • 1 Tbs. Braggs Aminos
  • Salt or vegetarian Chicken Style seasoning to taste

Instructions

  • Lightly spray a non-stick pan with olive oil. Saute onions, mushrooms, garlic, italian seasoning together on medium high heat until onions are soft. Add water by small spoonful as needed to keep onions from burning. Sprinkle with a pinch of salt.
  • Add Basil and tomato paste. Stir quickly until paste has mixed with onions then add diced tomatoes before it starts to scorch.
  • Allow to simmer together for 5 minutes or so. Add the rest of the seasonings and taste for salt.
  • May use as is for pasta, lasagna, or baked spaghetti. Add a little more water if needed for a thinner consistency.

Notes

**Variations:**
Blend the diced tomatoes before cooking and omit the mushrooms to use as pizza sauce.
Add 1/2 tsp. of powdered cumin and 1 tsp. oregano, blend the diced tomatoes, and use as tomato sauce for enchiladas or to flavor chili beans.
