Lucia’s Gluten-free Crackers

Crackers and cheese are such a great appetizer combination for brunches and holiday menus. These crackers are delicious with the Smoked Gouda-style Sliceable cheese.  They are quick and easy and you probably want to make several batches at a time as they won’t last long!

Lucia's Gluten-free Crackers

Ingredients

  • 1 cup unsweetened shredded coconut or coconut flour
  • 1 cup almond flour
  • 4 Tbsp ground flaxseed
  • 4 Tbsp Nutritional Yeast Flakes
  • 1 tsp. granulated garlic
  • 3/4 tsp. salt
  • 1 tsp. Italian seasoning
  • 1 Tbsp. coconut oil or extra virgin olive oil
  • 1/2 cup water

Instructions

  1. Preheat oven to 350º F.


  2. In a large bowl, mix together the dry ingredients thoroughly.


  3. Work oil throughout.


  4. Add water and mix well. Work with hands till it sticks together.


  5. Line a cookie sheet or baking pan with parchment paper.


  6. Place dough ball on pan, cover with plastic wrap to roll out thinly, 1/8″ thick or less.


  7. Score into squares or diamonds.


  8. Bake in oven for about 20 minutes till slightly golden in color or till as crisp as desired.


  9. Cool on baking sheet for 10 minutes. Store in airtight container once fully cool.
